These Energising Raw bliss balls are not only soothing to the body from the aid of Lemon, Ginger & Maca. They are also creamy from the Cashews with an added tropical twist from the Coconut and a comforting sweetness from the Dates. A beautiful balance to enhance natural energy in these chilly months.

These are a perfect healthy yet satisfying snack, to help keep on track during the winter. They are full of good fats, protein, fiber and Vitamin C. The Ginger also helps aid uncomfortable digestion and helps reduce inflammation in the body.

These Vegan, Gluten Free balls are made with 6 ingredients and if you want to tweak the recipe to have more or less of the Lemon or Ginger that is fine to do so.

The below recipe has a balanced flavor so there is room to add more ginger if you desire a spicy kick!

Instructions
  1. Firstly soak the Dates in hot water for 10 minutes until soft.
  2. Add the Cashew Nuts to a food processor and blitz until a crumb/meal forms.
  3. Add in the Maca Powder and Desiccated Coconut and process.
  4. Add in the Soaked dates, Lemon Juice + Lemon Zest and Ginger. Process until a firm dough forms.
  5. Scoop out a table spoon measure and roll out into balls on a tray.
  6. Once all mixture rolled out into balls (The mixture should make 10 - 12). Place tray into freezer and leave up to an hour to set.
  7. Remove from the freezer and store in an air tight container in the fridge for up to 1 week.
