This Summer has been substantially dry and sunny here in Wales,UK...Shock! With many Ice Cream opportunities too valuable to miss out on, I set out to create a healthy alternative Ice cream that is Dairy Free, Refined Sugar Free AND Healthy!



Moringa Leaf powder is a the main event in this recipe and a superfood! It is a highly nutrient dense antioxidant and compared with Kale, Moringa has more Protein, Calcium and 6x more Iron! Making it a great food source for vegans and anyone in need of treating an Iron deficiency.


   
  

Another reason to try Moringa Leaf Powder is for its Anti-inflammatory properties. Moringa includes Polyphenols which is beneficial to help fight against Oxygen-free radicles (that can lead to inflammation and a build up of cholesterol). Making it a brilliant source to keep close by during this strange year of Lock Down, as a go to health booster. In this Moringa, Mint Choc Chip Banana Nice Cream recipe I set out to make the most of all the home grown Mint in my garden! This is where the inspiration behind the recipe arose. Mint is readily available in many gardens across the UK and globally due to its easy to grow (invasive) abilities! Making this recipe a fresh and simple one to recreate this summer.


   
   

Moringa Leaf powder has a bitter earthy taste. Pairing this with the natural sweetness of the Bananas hides any bitterness and pairs beautifully! To add a further rich Green colour to the Nice cream and boost the nutritional value EVEN MORE, I have added a small amount of Spirulina Powder into the mix.


   
   

Traditionally Mint Ice Cream is paired with Chocolate! For a healthier vegan alternative I have used both Cacao Nibs for topping and some Vegan Choc Chips for added decadence! If you would prefer a stronger mint flavour then feel free to add a dash of Organic Peppermint Extract.

Instructions
  1. Start by placing 2-3 Medium sized Frozen Bananas into a food processor with the Moringa Powder, Mint Leaves, Spirulina Powder and 1/2 cup of Plant Based mylk (adding more later if needed)
  2. Blend on full power for 1 minute. Stop and scrape down the sides and keep blending (adding more Plant based Mylk if needed.)
  3. Keep scraping down the sides when needed until you get a uniform smooth and thick consistency.
  4. At this stage you can add the Optional Peppermint extract and Vegan Choc Chips and blend until just combined (5 seconds max)
  5. You are now ready to dish out this heavenly nourishing nice cream into your fave bowls!
  6. Don't forget to top this with a sprinkle of Cacao Nibs and more fresh Mint leaves from the garden.
